Since everybody was home for <a href=\"http:\/\/www.yurasko.net\/wfy\/2014\/03\/erinsnowbraugh-snowpatricksday-storm-dumps-over-7-inches-of-snow-on-alexandria-va.html\">ErinSnowBraugh<\/a> on Monday and we had asparagus in the refrigerator I thought I&#8217;d try making this &#8220;Strasburg omelette&#8221; for Erica.<\/p>\n<p>My recollection of the omelette wasn&#8217;t perfect, but close &#8211; <a href=\"http:\/\/www.washingtonian.com\/gallery\/food-drink\/what-the-nats-eat-for-breakfast.php#&#038;panel1-3\">I found the specifics of Strasburg&#8217;s omelette which he merely called scrambled eggs<\/a> only after I had made it.<\/p>\n<p>Here&#8217;s what I went with:<\/p>\n<p>2 eggs<br \/>\n1 stalk asparagus<br \/>\n&frac12; small yellow onion<br \/>\nApproximately 1 once ham steak<br \/>\nFresh grated Extra New York Sharp Cheddar cheese<\/p>\n<p>The big differences between my recipe and Strasburg&#8217;s was the ham and no red peppers which we did not have around. I also used New York Sharp instead of Pepper Jack.<\/p>\n<p><a href=\"http:\/\/www.flickr.com\/photos\/wfyurasko\/13222257013\/\" title=\"searing the ham by wfyurasko, on Flickr\"><img data-recalc-dims=\"1\" decoding=\"async\" loading=\"lazy\" src=\"https:\/\/i0.wp.com\/farm3.staticflickr.com\/2841\/13222257013_c820a209b1.jpg?resize=500%2C375\" width=\"500\" height=\"375\" alt=\"searing the ham\"><\/a><\/p>\n<p>First, I seared the ham, sprinkling Lawry&#8217;s seasoned pepper on the griddle.<\/p>\n<p><a href=\"http:\/\/www.flickr.com\/photos\/wfyurasko\/13222257763\/\" title=\"preparing the vegetables by wfyurasko, on Flickr\"><img data-recalc-dims=\"1\" decoding=\"async\" loading=\"lazy\" src=\"https:\/\/i0.wp.com\/farm8.staticflickr.com\/7399\/13222257763_7ab796a89a.jpg?resize=500%2C375\" width=\"500\" height=\"375\" alt=\"preparing the vegatables\"><\/a><\/p>\n<p>Once the ham was seared, I cut off a small piece, about 3 x 3 inches, and diced it.<\/p>\n<p>Next, I cut up the onion and asparagus, combined it with the ham and put it on medium-low heat in a pan covered in olive oil cooking spray. I slowly sauteed the vegetables.<\/p>\n<p><a href=\"http:\/\/www.flickr.com\/photos\/wfyurasko\/13222094085\/\" title=\"sauteing by wfyurasko, on Flickr\"><img data-recalc-dims=\"1\" decoding=\"async\" loading=\"lazy\" src=\"https:\/\/i0.wp.com\/farm8.staticflickr.com\/7195\/13222094085_5b0f206ca0.jpg?resize=500%2C375\" width=\"500\" height=\"375\" alt=\"sauteing\"><\/a><\/p>\n<p>Once the veggies were sufficiently sauteed (onion is clear) I removed it and added more cooking spray to the pan.<\/p>\n<p>I cracked two eggs, stirred them up and then added the ham and veggies.<\/p>\n<p><a href=\"http:\/\/www.flickr.com\/photos\/wfyurasko\/13222424534\/\" title=\"omelette cooking by wfyurasko, on Flickr\"><img data-recalc-dims=\"1\" decoding=\"async\" loading=\"lazy\" src=\"https:\/\/i0.wp.com\/farm4.staticflickr.com\/3702\/13222424534_bf3296a59d.jpg?resize=500%2C375\" width=\"500\" height=\"375\" alt=\"omlete cooking\"><\/a><\/p>\n<p>Keeping the pan on medium low heat, I added the ingredients. After I flipped the omelette, I shredded the New York Sharp onto the omelette, folded it over until done and then served with a buttered English muffin.<\/p>\n<p><a href=\"http:\/\/www.flickr.com\/photos\/wfyurasko\/13222090345\/\" title=\"Cheese! by wfyurasko, on Flickr\"><img data-recalc-dims=\"1\" decoding=\"async\" loading=\"lazy\" src=\"https:\/\/i0.wp.com\/farm4.staticflickr.com\/3792\/13222090345_d17e210f57.jpg?resize=500%2C375\" width=\"500\" height=\"375\" alt=\"Cheese!\"><\/a><\/p>\n<p><a href=\"http:\/\/www.flickr.com\/photos\/wfyurasko\/13222248423\/\" title=\"almost ready by wfyurasko, on Flickr\"><img data-recalc-dims=\"1\" decoding=\"async\" loading=\"lazy\" src=\"https:\/\/i0.wp.com\/farm8.staticflickr.com\/7054\/13222248423_cf8584fa9d.jpg?resize=500%2C375\" width=\"500\" height=\"375\" alt=\"almost ready\"><\/a><\/p>\n<p>Erica enjoyed it and noted that with the asparagus and ham, a strong cheese was needed. Let&#8217;s hope <strong>Doug Fister<\/strong> is healthy enough for the honor.
